Kabuli Pulao, also known as Kabuli Palaw or Qabili Palao, is a traditional Afghan dish. Here's a recipe to make Kabuli Pulao:
Ingredients:
2 cups basmati rice, soaked for 30 minutes and drained
1 lb lamb or chicken, cut into pieces
2 onions, finely sliced
2 carrots, julienned
1/2 cup raisins
1/2 cup slivered almonds
1/2 cup chopped pistachios
1/2 cup chopped fresh cilantro (coriander)
1/2 cup chopped fresh mint leaves
2 tablespoons sugar
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/4 cup vegetable oil
Salt, to taste
Water, as needed
Instructions:
1. In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until they are golden brown.
2. Add the lamb or chicken pieces and cook until they are browned on all sides.
3. Add the julienned carrots, raisins, slivered almonds, chopped pistachios, sugar, and spices (cardamom, cinnamon, cloves, cumin, black pepper). Mix well to combine.
4. Add enough water to cover the meat and bring the mixture to a boil. Reduce heat and simmer for about 1 hour, or until the meat is tender.
5. In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained rice along with some salt. Cook the rice until it is about 70% cooked, then drain and set aside.
6. Preheat the oven to 350°F (175°C).
7. In a large baking dish, layer the partially cooked rice over the meat mixture. Sprinkle the chopped cilantro and mint leaves on top.
8. Cover the baking dish with aluminum foil and bake in the preheated oven for about 30 minutes, or until the rice is fully cooked and fluffy.
9. Serve hot, scooping the rice and meat mixture onto plates. Enjoy your Kabuli Pulao
