Chaat is a popular Indian street food known for its sweet, spicy, tangy, and savory flavors. There are many variations of chaat, but here's a recipe for making aloo chaat, which is made with potatoes:
Ingredients:
For the Aloo Chaat:
2 large potatoes, boiled, peeled, and chopped into small cubes
1 small onion, finely chopped
1 small tomato, finely chopped
1 green chili, finely chopped (optional)
2 tablespoons chopped fresh coriander (cilantro) leaves
1/2 teaspoon roasted cumin powder
1/2 teaspoon chaat masala
1/4 teaspoon red chili powder
Salt, to taste
Tamarind chutney and mint chutney, to taste
Sev (thin gram flour noodles) for garnish
Fresh coriander (cilantro) leaves for garnish
Lemon wedges, for serving
For Tamarind Chutney:
1/2 cup tamarind pulp
1/4 cup jaggery or sugar
1 teaspoon roasted cumin powder
1/2 teaspoon black salt
Salt, to taste
For Mint Chutney:
1 cup fresh mint leaves
1/2 cup fresh coriander (cilantro) leaves
1-2 green chilies
1 tablespoon lemon juice
Salt, to taste
Instructions:
Prepare the Tamarind Chutney:
1. In a small saucepan, combine tamarind pulp, jaggery or sugar, roasted cumin powder, black salt, and salt.
2. Cook over low heat until the mixture thickens slightly. Allow it to cool.
Prepare the Mint Chutney:
Blend mint leaves, coriander leaves, green chilies, lemon juice, and salt in a blender until smooth. Add a little water if needed to blend.
Assemble the Aloo Chaat:
1. In a large bowl, combine the chopped potatoes, onion, tomato, green chili, and coriander leaves.
2. Add roasted cumin powder, chaat masala, red chili powder, and salt. Mix well.
3. Add tamarind chutney and mint chutney to taste and mix until everything is coated evenly.
Serve:
1. Transfer the aloo chaat to serving plates.
2. Garnish with sev, fresh coriander leaves, and a squeeze of lemon juice.
3. Serve immediately and enjoy the flavorful chaat!
