Here's a recipe for making Patisa, also known as Soan Papdi, a popular Indian and Pakistani sweet:
Ingredients:
1 cup gram flour (besan)
1 cup sugar
1/2 cup ghee (clarified butter)
1/4 cup water
1/2 teaspoon cardamom powder
A few saffron strands (optional)
Chopped nuts for garnish (such as almonds, pistachios)
Instructions:
1. In a heavy-bottomed pan, heat the ghee over low heat.
2. Add the gram flour to the pan and roast it, stirring constantly, until it turns golden brown and aromatic. This may take about 10-15 minutes.
3. In a separate saucepan, combine the sugar and water. Bring to a boil, stirring until the sugar dissolves. Continue to boil until it reaches a one-string consistency (when a drop of syrup between your fingers forms a single thread).
4. Slowly add the sugar syrup to the roasted gram flour, stirring continuously to prevent lumps from forming.
5. Add the cardamom powder and saffron strands to the pan. Mix well to combine.
6. Continue to cook the mixture, stirring constantly, until it thickens and starts to leave the sides of the pan.
7. Remove the pan from the heat and pour the mixture onto a greased plate or tray.
8. Smooth the surface of the mixture with a spatula and sprinkle chopped nuts on top.
9. Let the Patisa cool and set for a few hours before cutting it into squares or diamonds.
10. Serve the Patisa at room temperature and enjoy this crunchy and sweet delicacy!
