How to Make Jalebi

Here's a recipe for making jalebi, a popular Indian and Pakistani sweet:

Ingredients:

For the batter:

1 cup all-purpose flour
1 tablespoon gram flour (besan)
1/2 teaspoon baking powder
1/4 teaspoon turmeric powder (for color)
1/2 cup plain yogurt
Water, as needed
Oil or ghee, for frying

For the sugar syrup:

1 cup sugar
1/2 cup water
1/2 teaspoon cardamom powder
Saffron strands (optional)
Lemon juice or rose water, a few drops (optional)

Instructions:

1. In a bowl, mix the all-purpose flour, gram flour, baking powder, and turmeric powder.

2. Gradually add the yogurt and enough water to make a smooth batter. The consistency should be similar to pancake batter. Cover the bowl and let it rest for about 12 hours or overnight.

3. In a saucepan, combine the sugar and water for the sugar syrup. Bring to a boil, stirring until the sugar dissolves. Add the cardamom powder and saffron strands. Simmer for about 5-7 minutes, or until the syrup slightly thickens. Stir in lemon juice or rose water, if using, and set aside to cool.

4. Heat oil or ghee in a deep frying pan over medium heat.

5. Fill a squeeze bottle or a piping bag with the batter. Squeeze the batter into the hot oil in a circular motion to form spirals or pretzel shapes. Fry until the jalebis are crisp and golden brown, flipping them once to ensure even cooking.

6. Remove the jalebis from the oil and drain them on paper towels briefly.

7. Dip the hot jalebis into the warm sugar syrup, ensuring they are coated evenly. Allow them to soak for a few seconds, then remove and place them on a plate to cool.

8. Serve the jalebis warm or at room temperature. Enjoy this sweet and crispy treat!
