Here's a recipe for making Gajar Halwa, a popular Indian and Pakistani sweet dessert made with carrots:
Ingredients:
1 kg carrots, peeled and grated
1 liter full-fat milk
1/2 cup sugar, or to taste
1/4 cup ghee (clarified butter)
1/4 cup chopped nuts (such as almonds, cashews, pistachios)
1/4 cup raisins
1 teaspoon cardamom powder
A few strands of saffron (optional)
Silvered almonds and pistachios for garnish (optional)
Instructions:
1. In a large heavy-bottomed pan, heat the ghee over medium heat.
2. Add the grated carrots to the pan and sauté them in the ghee for about 5-10 minutes, stirring occasionally.
3. Add the milk to the pan and bring it to a boil. Reduce the heat to low and let the carrots cook in the milk, stirring occasionally, until the milk is absorbed and the carrots are soft and cooked through. This may take about 45 minutes to 1 hour.
4. Add the sugar, chopped nuts, raisins, cardamom powder, and saffron strands to the pan. Mix well to combine.
5. Continue to cook the halwa, stirring frequently, until it thickens and reaches a pudding-like consistency.
6. Remove the pan from the heat and let the halwa cool slightly.
7. Garnish with silvered almonds and pistachios, if desired.
