Here's a recipe for making chicken shami kabab:
Ingredients:
1 lb boneless chicken, boiled and shredded
1/2 cup split chickpeas (chana dal), soaked for 2 hours and drained
1 onion, finely chopped
2 green chilies, finely chopped
2 tablespoons ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
1/2 teaspoon cumin powder
Salt, to taste
2 tablespoons chopped fresh cilantro (coriander)
2 tablespoons chopped fresh mint leaves
1 egg, beaten
Oil, for frying
Instructions:
1. In a large bowl, combine the boiled and shredded chicken with the soaked and drained split chickpeas.
2. Add the chopped onion, green chilies, ginger-garlic paste, turmeric powder, red chili powder, garam masala, cumin powder, salt, cilantro, and mint leaves to the bowl. Mix well to combine all the ingredients.
3. Using a food processor or blender, blend the mixture until it forms a smooth paste. You may need to add a little water to help with the blending process.
4. Take a small portion of the mixture and shape it into a round or oval kabab.
5. Heat oil in a frying pan over medium heat. Dip each kabab in the beaten egg and fry in the hot oil until golden brown on both sides.
6. Remove the kababs from the oil and drain on paper towels to remove excess oil.
7. Serve hot with mint chutney or your favorite sauce. Enjoy your chicken shami kababs.
